Herbal “Coffee”

If I had a dollar for every time someone commented “but what about my morning coffee?” after learning about the autoimmune protocol diet, I’d be filthy rich! So it was only a matter of time before an inventive AIP blogger came up with a good coffee substitute. This Herbal Coffee uses dates for sweetness and a couple of ingredients you can likely order online (maybe even in bulk if you drink a lot of coffee!) if you can’t find them locally. This recipe was originally published in the e-book 85 Amazing AIP Breakfasts put together by Eileen Laird, which is no longer available.
Herbal “Coffee”
Ingredients
- 1 tablespoon roasted dandelion root
- 1 tablespoon roasted chicory root
- 1 tablespoon carob powder
- 1 whole dates pitted
- 3 cups water
Instructions
- Combine all ingredients in a small saucepan and bring to a boil.
- Lower heat and allow the mixture to simmer for 5 minutes.
- Remove from heat, strain and serve.
