Autoimmune Protocol Easter Menu
Holidays can be tough for a lot of reasons, and being on a restricted diet like the autoimmune protocol doesn’t help. When there are gifts to buy, events to plan, and hungry mouths to feed, having to worry about food sensitivities on top of everything else can be downright overwhelming.
While I wish I could take all that stress off your shoulders, hopefully, this autoimmune protocol Easter menu will help a little. These are my go-to recipes for spring celebrations, featuring light, earthy flavors, tons of herbs, and a smidge of comforting fruits.
Start the day with a fun, healthy Carrot Cake Smoothie along with some protein-rich sausage patties and either a simple side of sauteed greens or some decadent Prosciutto-Wrapped Pears. We always serve dinner early, so anything in between is a fend-for-yourself situation, though we usually prefer to wait for the feast. This hearty mix of Applesauce Pork Ribs, Mashed Sweet Potatoes, and Maple Bacon Brussels Sprouts is sure to tide everyone over (and if not, there are usually leftovers in the fridge for a second dinner later)!

BREAKFAST
Carrot Cake Smoothie
This luscious smoothie works best in a high-powered blender like a Vitamix or Blendtec so the carrot gets blitzed into a smooth puree. With warming spices and creamy banana, it’s a delicious treat!
Apple Sausage Patties
These simple sausage patties make for a great breakfast protein. The flavor feels indulgent and pairs well with any side, whether its leftovers, eggs, or a salad.
APPETIZER
Prosciutto-Wrapped Pears
I love a fresh pear. Perfectly firm and juicy, with a melt in your mouth texture. Jazz them up with a prosciutto wrap and balsamic glaze, and you’ve got a snack/appetizer to please a crowd.
DINNER
Mashed Sweet Potatoes
If you make these with a white-fleshed sweet potato or yam, they almost look like regular mashed potatoes! They’re delicious either way, though, and also work well with parsnips.
Maple Bacon Brussels Sprouts
Everything is better with bacon, especially Brussels sprouts. I love them with this maple-bacon combo. Sorry mom, but your green bean casserole was never this tasty.
Applesauce Pork Ribs
Ribs, with applesauce? You bet! These sticky, melt-in-your-mouth ribs are an awesome, crowd-pleasing entree certain to get everyone’s mouths watering.
DESSERT
Copycat Creme Squares
It wouldn’t feel like Easter without an ode to everyone’s favorite Creme Egg. I was always a sucker for them as a kid. These homemade squares hit the spot!
