Almond Butter Cookies

These Almond Butter Cookies, ready in about 15 minutes, come out of the oven soft and gooey but firm up as they cool. They can be made with chocolate chips mixed in, but I forgot to add mine and wound up melting them down into a drizzle instead for the recipe photo. A bit messy, but equally delicious! You can also make these with other nut butters like cashew, especially if you aren’t super fond of the taste of almonds.

Ingredients
- 1 cup almond butter
- 1 cup coconut sugar
- 1 medium egg
- 1/4 cup chocolate chips optional
Instructions
- Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
- Combine all ingredients in a mixing bowl, then portion out onto the baking sheet in 1" balls about 2" apart.
- Bake for 8 minutes, then remove from oven and use a spatula to press the cookies into a flat disc shape if they didn't spread out while baking.
