You don’t have to make any concessions with this dairy-free treat: Bananas in coconut milk is a staple in many Asian cuisines. I had my first taste of it at a local thai restaurant and even as someone who doesn’t usually like coconut, I was swept off my feet. This version is very simple to make and lets the bananas’ sweetness speak for itself.

Bananas and “Cream”
Ingredients
- 1 1/2 cups coconut milk
- 1/2 tablespoon vanilla extract
- 1/4 teaspoon sea salt
- 3 medium banana sliced

- Combine the coconut milk, vanilla, and salt and bring to a simmer over medium heat, stirring constantly.
- Add the bananas and cook, stirring occasionally, for about 10 minutes, then serve hot.
