  • Preheat the oven to 400F.
  • Lay the sliced bananas in the bottom of a baking dish, side-by-side and sprinkle the toppings on top.
  • Bake 5-6 minutes, or until the coconut flakes are lightly toasted.

  1. This might be obvious to anyone else, but 2 questions. The recipe says whole bananas sliced in half. I assume in half lengthwise, so ending up with 2 long pieces. The picture seems to show 4, rather than 2 bananas? Another question – do you slice them all the way through? Wouldn’t all the toppings fall through? Or do you slice the bananas part-way down, like a hot dog bun and THAT is where the toppings go?

    1. Yes, two long pieces per serving. The picture shows two servings. It’s hard to slice the bananas only partway because they’re so thin. Baking them on a bed of foil you can then wrap up helps keep the toppings in.
