Thai Basil Agua Fresca

I love basil. A lot. This is a fairly recent discovery for me, because I never liked the herby taste of cilantro, oregano, or parsley and got it into my head that all herbs would taste like grass. But gosh, basil. It’s sweet and earthy and pairs so very well with citrus, strawberries, and tomatoes. This recipe with lime and honey is an adaptation of one from one of my favorite Austin hangouts, Thai Fresh.

Thai Basil Agua Fresca
Ingredients
- 4 cups basil
- 1 1/2 cups water
- 1/2 cup lime juice
- 1/2 cup honey
- 4 cups sparkling water
Instructions
- Combine the basil, water, lime juice, and honey in a blender and process until smooth.
- Strain the puree into a pitcher and then stir in the sparkling water. Serve cold.
