Watermelon Lemonade

Here in Texas, this winter has had as many 80-degree days as 30-degree ones, often bouncing back and forth within the same week. I’ll make ice cream on a hot day, and then have leftovers taking up space in the freezer for a month because it gets cold again! So next time things swung hot, I reached for a warm-weather classic that would require no long-term storage: Lemonade! Sweetened with honey and optionally served with a hint of mint, this Watermelon Lemonade is the perfect summer refreshment. Whatever time of year that summer happens to come.

Watermelon Lemonade
Ingredients
- 5 pound watermelon peeled and cubed
- 1 1/4 cups lemon juice
- 6 cups water
- 1/4 cup honey or to taste
- 1/3 cup mint optional
Equipment
Instructions
- Blend the watermelon and lemon juice, in batches if necessary, then transfer to a large pitcher.
- Add the water, honey, and mint and mix well.
- Pour over ice to serve.
